Shortening
White butter, also known as shortening, refers to any type of fat that remains solid at room temperature. Shortening can be made from animal fat, vegetable fat, or a combination of both, but most commercial shortening is derived from vegetable oils such as palm oil or soybean oil. The addition of shortening helps soften dough for bread and pastries, while also enhancing the aroma of the final food product.
